1. The slice keeps tearing even after sharpening

If even after a proper sharpening the slice still tears at the edges, the edge can no longer form. The blade has lost its temper in the cutting zone: no sharpener can bring it back.

2. The diameter has visibly shrunk

Every sharpening takes off a few tenths of a millimetre. After dozens of sharpenings, the blade diameter is several millimetres smaller than the original. When the blade gets close to the minimum-size notch (often stamped on the blade itself) it's time to change it: too small a diameter exposes the hub and creates a serious safety risk.

3. Micro-cracks or rust spots appear

Inspect the blade against a light. If you see micro-cracks along the cutting edge or rust spots (dark patches that don't come off with cleaner), the blade needs replacing. Rust can contaminate food and is an HACCP violation.

4. Abnormal vibration during slicing

If a machine that used to be quiet now vibrates or makes metallic noises while spinning, the blade may have gone out of balance. An accidental knock or uneven wear can throw off the balance. An unbalanced blade strains the hub bearings and must be replaced before it causes bigger damage.

5. You've exceeded recommended hours

Rule of thumb: a well-maintained chrome-steel blade has a useful life of about 1,500–2,000 hours of work. If you track your machine's running hours, you can plan the replacement before problems appear.

How to pick the replacement blade

The blade must be compatible with your exact slicer model. Check diameter, hub height, number of holes and hole diameter. For example, the Berkel BS933 blade in 100 Cr6 is designed specifically for that model and is not interchangeable with other Berkels.

Disposing of the old blade

A used blade is hazardous waste: sharp and potentially contaminated. Wrap it in thick cardboard, tape it securely and take it to the metal section of your local recycling centre. Never throw it in the general waste.
